BACON FLAVORED SPREAD

“Epicmealtime’ and ‘J&D Foods’ have collaborated to create the ultimate bacon flavored spread. ‘J&D Foods’ are no strangers to bacon products and are the creators of bacon salt and Baconnaise. We here at the Mad Meat Genius camp are fans of Baconnaise. We felt obligated and curious to give this new product a try. Epicmeatime has a philosophy that is refreshing and honest. This statement by Epicmeatime may shock some of the correctness police: “In a time when society has put an emphasis on health and diet, we are the ones that have chosen to rebel. We cook the greasiest of grease, the sloppiest of slop and always leave room for more bacon.”

The top of the jar is removed and a pleasant mayonnaise odor greets your sinus receptors. I smell a faint odor of smoke. A finger (clean) is dipped into the test jar and placed into my awaiting open kisser. The texture is smooth and melts with flavored mayonnaise comfort. Here is the million dollar question. Does it taste like bacon? The answer is; Yes. It is a subtle flavor that does not overpower. The slight smoky component is a treat to the tongue. This is quality mayonnaise that has been kissed with glorious bacon flavor.  I can think of endless food applications for this spread.

A Chilebrown favorite, bacon avocado sandwich will be our test vehicle for our spread. Some bacon from Freedom Meat Lockers will take a trip to the black iron for our sandwich. The bacon flavored spread was mixed with mashed avocado. A jalapeno roll will cradle our bacon flavored filling. This sandwich was a creamy, bacon crunchy, satisfying treat. Was it overkill using so many bacon flavors? I say, absolutely not. I may not agree entirely with Epicmeatime’s statement but this is some darn tootin good bacon flavored spread.

BACON SUNSCREEN

When and if I am working on my tan, coconut fragrance will not be acceptable for this Mad Meat Genius. Thankfully there is a product that fits into my meaty lifestyle. Bacon Sunscreen by J&D Foods is the newest sizzling sunscreen on the market today. A little dab will do you. I wonder why Lucy has been following me around?

DEVILED BACON BACON BACON EGGS

Deviled eggs are almost always welcome at a party. How about adding a Chilebrown twist. These eggs will be made with Baconnaise, Bacon Salt and to really go over the top, some home made bacon will be added. This egg will be only a vessel to contain all this bacon goodness.

Lets start by cooking the eggs. Place 6 eggs in pot and cover with water. Bring to a boil and then turn off heat. Let sit in hot water for 15 minutes. After 15 minutes plunge the eggs in an ice water bath. Peel shell from eggs. Cut in half and reserve yolks in a bowl.

Add 1 cup of baconnaise, 1 tablespoon mustard 1 teaspoon bacon salt and 1/4 cup of chopped bacon. Mix all together. Place mixed mixture into a ziplock bag. Cut the end and pipe into reserved egg halves. Garnish with a sprig of cilantro and a small piece of bacon.

Try not to eat all the eggs before you reach the picnic.

MOJO'S MAJOR AWARD

Why is Mojo moping around? He just received a Major Award from Bacon Salt. Last December, Bacon Salt had a recipe contest. Mad Meat Genius went to the lab and created 'Crab Cakes a la Baconnaise'. These cakes were
'Scrumpdillyicious'. Using fresh cooked crab was the key. The Baconnaise was a perfect ingredient to put this dish over the top. The people at Bacon Salt just sent this award the other day.

Why is Mojo moping? He posed for the original review of Baconnaise. He was present in the creation and consumption of the Crab Cakes. Mojo wants to know why he never gets to try this stuff. He thinks Chilebrown is pretty darn stingy. He will sing a different tune when he gets his own special batch of Bacon Dog Cookies..
