My good friend Angelo from Angelo's Meats in Petaluma California is alive and kicking. This man has more energy than anybody I know. He has endured and prospered during the last year. He has even introduced his own line up of raviolis. It is made my an outside company but uses his secret recipe. Angelo did tell me it has mushrooms and squash and spinach in the dough. This ravioli does not contain any meat. Angelo is NOT making any statement. It is just the fact that his processing facility is not certified to use meat products. This ravioli has the Mad Meat Genius seal of approval. If nobody had mentioned the lack of meat it would not be known with is delightfully savory flavor. I usually serve it with a red meat sauce anyway. Bravo Angelo.

QUADRUPLE CHOCOLATE CHEESECAKE
Ms. Goofy has outdone herself in the baking department with this quadruple chocolate cheesecake. She has had a lot of time on her hands to hone her skills in the dessert department. She loves to bake and I am the lucky recipient of her craftsmanship. This cake has a crust of Oreo cookies that have a chocolate filling. The cream cheese filling has a chocolate mixed throughout. The cake is covered with a dark chocolate ganache. This topping is decorated in a white chocolate lattice glaze. Is there such thing as too much chocolate? I do not think so.

PRO-PLANET
Epicurious magazine has dropped all their beef recipes from their publications. This is a symbolic move to promote home cooks to become more environmentally friendly. POPYCOCK is what this Mad Meat Genius has to say. I am so sick and tired of Virtue Signaling from the media and so called Woke Crowd. We all vote with our dollars and it is a good thing that I cancelled my subscription many years ago.
I apologize for this mini Mad Meat Genius rant. I am going to go cook a steak and calm down.

THE GOLDEN STATE BATTLE III
Hello from Hollister California. This weekend we were at a two day KCBS bbq event called The Golden State Battle III. I know we have been absent from the airwaves since last Thanksgiving and we would love to share a couple of images with you. We want to welcome back some old friends that do not visit Facebook and personally welcome a new friend from this weekend; Jennie. Today we are only sharing pictures and I will have a few words at the end. Enjoy the bbq aroma.
As you may have noticed I have not been posting lately. I have been asking myself if I have lost my mojo for Mad Meat Genius?. I have all sorts of excuses; pandemic, election, and just the way everything revolves around the latest news cycle right or wrong. My website was bombarded by Spam comments which really was disheartening. I have turned on the comment moderation mode which means I can zap all junk comments to virtual oblivion.. I experienced the death of my Bro-In-Law and our beloved pet Lucy last year. So many negative vibrations that I just did not want to share anything. Let's open a new chapter in Mad Meat Genius. HORMEL GHOST REAPER CHILI
Exotic hot chilepepper products have been the latest internet buzz. Hormel has cashed in on a Ghost Reaper chili. These are two of the hottest peppers grown. I can personally attest that these peppers need respect and should be approached cautiously. Hormel announced this offering on social media. They set up a time that this product would be available for sale and sold out within the hour. I did procure one can. Within minutes Ebay had this product at 10 times the actual price. I am not sure what to say about that. Let's give it a try.
It was hot. I tasted fresh chile and it also had an after burn from the dried chiles. It was very decent in a Hormel Chili kind of way. With six different chile in this mix, I am not sure if I could identify ghost or reaper chile. Your senses were assaulted by fresh and dried all in a chilehead splendor kind of way. How hot was it? For most normal people I would say this concoction was very hot and you might not enjoy it. I eat some sort of chile everyday. I thought is was hot but not as hot as ghost and reaper chile can be. It was tame in this sense. Regardless of the downsizing of potential heat this mixture left my mouth on fire for quit awhile. I actually enjoyed this chili with chile. Good job Hormel.
