Summer is several months away. That does not stop Ms. Goofy from longing for a certain dish she experienced at the California State Fair. We are talking about the deep fried 'White Castle Cheeseburgers'. I do admit they were very tasty They may not be considered health food, but, if we also throw in some asparagus and mushrooms would our health transgression be minor? We came up with a batter that really rocked. It was light, crisp and flavorful. Let's fire up the deep fryer.

  1. 3/4 flour ( I used mix of 1/3 cup whole wheat & 2/3 cup bread flour)
  2. 1/2 cup of cornstarch
  3. 1 tsp sugar
  4. 1  tsp baking powder
  5. 1/2 tsp baking soda
  6. 1/2 tsp salt
  7. 1 tsp sugar
  8. 2 egg whites
  9. 1 tsp of your favorite rub
  10. 1 cold can of the 'King of Beer'
Mix the first 8 ingredients. Take a whisk and combine enough  beer to make a thin pancake batter consistency. Heat oil to 350 degrees. Using tongs dip frozen White Castle burgers into batter. Gently lower into hot oil. Fry for approx 4 minutes on each side or till golden brown. Drain on paper towels.

I do have to admit the asparagus was definitely, over the top and delicious. The White Castle burgers put a smile on Ms. Goofy's face. We served this with a chipotle mayonaisse dipping sauce. There is just something wrong about this dish that makes it so right. Ms. Goofy has declared this her new favorite dish.

I have never heard of such a thing. There is a restaurant here that serves a hamburger where the two buns are glazed donuts. I agree, a side of asparagus and you're good to go.

"They may not be considered health food". This is probably my favorite quote of the year. And, yes, those cheeseburgers look awesome!

Deep fried sliders! Oh heck yeah.

Lea Ann, Glazed donuts huh? That gives me an idea.

Robert, Health food is overated. Moderation is the key. I am the king of excessive moderation.

Greg, and deep fried asparagus!

Words fail me. Asparagus, particularly the first of the year, should only be steamed lightly, slicked with butter and eaten with reverence. At least you did the reverence part. I love you anyway.

Zoomie, Do not knock it till you have tried it. One taste of deep fried asparagus and you will be a convert.
