The Kansas City Barbecue Society is trying to generate more interest in their organization. They have created a new category of competition of judging steaks. Contestants have two alternative meat companies to procure a Kansas City Strip steak to cook and submit to judges. Yours truly has taken the certification course and has earned credentials to judge said contest. This new category is a lot simpler, cheaper and easier than the tradition KCBS four meat contests. We shall see if it becomes popular. I am ready to judge but I have not found any local KCBS steak contests to judge in the 2022 season.

I'm curious CB. What are the criteria for a steak to be judged as an excellent example of the type?
Zio, Medium rare is the target and Presentation, taste and tenderness are scored. I still have not actually judged a Steak Competition so this is a little new to me.
